Toby is the Vice President of Restaurant Technology for Church’s Texas Chicken, and in that capacity helps to set strategy and execute on technology for the brand that extends over 1500 restaurants and twenty-five countries. After a successful fifteen-year career managing a technology consultancy that worked with many of the major hotel and restaurant operators in the world, Malbec returned to his roots in early 2025 to help support major growth and technology initiatives for this expanding QSR leader.
Malbec is an “operational technologist” who brings over thirty years of technical and operational expertise to his clients, Toby began his career in the hospitality industry coming up through the operations ranks before getting into technology when companies were first beginning to embrace its value as a critical business tool. He was responsible for the design and development of some of the first PC-based Property Management Systems for small to mid-sized hotels as well as working on some of the early touchscreen-based POS systems.
After ten years in hotel technology, Toby joined Saks Fifth Avenue to head up the high-end apparel’s CRM initiatives and was responsible for designing and managing the development of several key applications including Saks Trak and their E-Client Book. In 2008, he joined the IPC (Independent Purchasing Co-Operative), the franchisee-owned arm for Subway restaurants, and was responsible for building and managing the team that would go on to build Subway POS. The solution is still use in Subway restaurants worldwide to this day.
Malbec is a 1985 graduate of the University of Vermont with a BA in Political Science and in 2023 earned his MBA at the Isenberg School of Business at the University of Massachusetts at Amherst. He is an avid road cyclist and memorabilia collector, focusing on game-worn hockey jerseys.
